		<description>Love this recipe...I just use my homemade beef stock...(I make it in a weekly batch and freeze) and use sherry.  A 1/2 cup is fine.  But you can use more...and red wine when I have an open and ailing bottle.

I can never find my broil-proof dishware...probably outside under the dog houses....so I have three or four small iron skillets.  They hold about 3 cups at least...I put them under the broiler...Works every time...but use lots of padding.
